Superbowl Guacamole

by Vivian Fleitstra on February 2, 2014

Superbowl Sunday.  As I sit and write this, I think about what foods are traditionally served and eaten on Superbowl Sunday.  In the past, I would have indulged in nachos, pizza, chips, wings and other foods we typically see at such gatherings.  Actually one of my favorite foods is pizza.  But instead of always ordering out, I make my own these days, but I do also order out on busier days, just like most normal American families.

Since starting IIN, I’ve lost 18 lbs, just by switching foods and replacing unhealthy choices with healthier versions.   I had an opportunity to speak a couple of weeks ago at a local area College about Healthy habits and discussed making small changes that impact your health and life.  I spoke about crowding out foods, people, things that make you unhealthy and unhappy.  What you will find is when you naturally remove these things from your life, healthier versions (foods and relationships) take their place.

I typically share healthy tips, methods, alternative choices and provide tools to assist my clients directly as part of my services because I have found them useful too.  I recognize that making changes can be difficult, such as having the level of commitment needed, your support structure, lifestyle, career, family, friends, are all factors when you want to make positive change in your life.  I found that being healthy is not just about what you feed your body, it’s also about what you feed your soul.  Through my own journey, I have learned that sometimes you have to give-up unhealthy behaviors and people, to set you free from what is holding you back.  I have taken my own experience and woven it into my programs as a recipe to help my clients find their healthy vibrant pathway that works for them.  To learn more, please see my 28-day program. I could go on and on, since I love talking about it and sharing my passion, but let’s get back to the topic at hand.

Let’s get back to the Superbowl.   I will be watching, cheering for the Seahawks and sharing this time with loved ones.   But I wanted to share my version of  a healthy dip that you can find in my 11-day clean eating program, Eat to Nourish.

  • 1-2 ripe avocados
  • 1 red or yellow pepper, chopped
  • 1/2 lemon, juiced
  • 1/2 lime, juiced
  • 1 tablespoon of raw Apple Cider Vinegar
  • 1-2 chopped Roma tomatoes
  • 1-2 tbsp of chopped yellow onion
  • Parsley to garnish

Mix in a bowl.  Mash the avocados in a bowl.  Add chopped pepper, lemon juice, lime juice, and apple cider vinegar.  Mix well, mix chopped tomato and onion place on top or in the guacamole mixture, garnish with parsley and serve.

Happy Superbowl Sunday!

Thanks for reading. ~ Vivian.
