Paleo Gluten-Free Pancakes

Hi there!   Happy Sunday!

I have been wanting pancakes but wanted to try a Paleo gluten-free pancakes version.  Here’s one I thought I’d share with you, if you are looking for alternatives to regular pancakes, wanting to increase protein and avoid gluten, give it a try.  Leave a comment and let me know if you made any changes to your liking.glutenfreepancakes

Starting your day with additional protein keeps you fuller longer, rebuilds muscle after working out and not skipping breakfast avoids spikes in sugar, keeping cravings away.

What’s needed:

4 eggs (watching cholesterol, use for 6 egg whites)

3 tbsp. coconut oil

1/4 cup milk (of choice).  I use almond or coconut milk.

1 tbsp. of maple syrup

1/4 cup coconut flour

1/4 tsp. of baking soda

1/8 tsp. sea salt

How to make it:

1.  In a mixing bowl, whisk together the eggs, milk, liquid coconut oil (heat in microwave till melted), and maple syrup. Set aside.

2.  In a separate bowl, whisk together the coconut flour, sea salt and baking soda.

3.  Pour egg mixture over the flour mixture and stir until just combined.  Don’t over mix.  (Note:  start with 1/4 cup, add more if you like it more watery, as I do, I used 1/2-3/4 cup, add slowly to your liking).

4.  Heat a large skillet to medium heat and melt some coconut oil in pan.  I use coconut oil spray.

5.  Use either 1/4 cup or 2 tablespoons to measure the batter (small or large pancake).

6.  *Coconut flour pancakes won’t bubble on the top so be on the lookout for the edges to brown and lift the side of the pancake slightly to watch for the flip.

7.  I found 2-3 minutes per side is good.

Serve and top with favorite fruit and maple syrup.
