Delicious Pumpkin Pie Smoothie

Good Morning.   Last night I ventured into making my own pumpkin puree.   It was really easy.   I had gotten a medium-sized pumpkin from our local CSA, Calvert Farms.   I had it for awhile and decided to bake it last night.   Here’s how:

  • Slice pumpkin in half
  • clean out the seeds
  • Spray cookie sheet with PAM (olive oil)
  • Place flat on cookie sheet
  • Cook for 50-60 mins at 425 degrees.

When its done, remove from oven, the skin will have begun peeling off.  Careful not to burn your hands and let it cool.   Scoop out all the pumpkin and discard the skin. Place in food processor to puree or leave as is and puree when needed.


This morning I made this delicious pumpkin pie smoothie which is also one of my recipes in my DIY, 11 day detox, which I will be offering as a Holiday Cleaning Eating program this year.

I added the following ingredients to my Vitamix.

  • 1 cup of almond, soy, rice or non-fat milk (I used unsweetened almond milk)
  • 1/2 cup of fresh pumpkin (you can also use canned pumpkin)
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of pumpkin pie spice
  • 1 tbsp of all natural honey
  • 1 date (optional)
  • 3 ice cubes
  • Top will a dash of nutmeg or pumpkin pie spice

Blend, on low – setting 7, then high on 6 for several minutes until everything is well blended.   Enjoy!!!
